I was going to create a Client Script on the sc_task table, an onChange script, but I notice that I can't access the name of the variable from the Field name. It just says Variables, and I need the name of the variable which would be SAP Order Number, then right a script that if it changes, the value would be copied to another field.
This is the variable, I know that in the Workflow we normally do something like current.variables.sap_order_name, but not sure in this case that I need to write an onChange script.
I really appreciate any help.

Why don't you use UI policy on the catalog item itself for this and mark true on Applies on catalog task only and then use script action to update field values.
