Is it possible to disable the audit (scoped application) from left navigation and capture them in updateset and then deploy the updateset from dev to test. If it is not possible what is the other solution?
I am aware of that servienow by default takes default updateset when we try to make any changes on scoped applications. Also We don't want to disable directly in every instance.

If you want to only hide it from left navigation, you can do that by changing their application menus and modules to active false.
Regarding deploying update set, yes you can retreive update set in test.

Yes, make a update set in audit scoped application. Do your customization in that & load it to test.
