I have a multiple-choice variable in catalog item, for which I don't want the first variable to be selected by default, and this Do not select the first-choice field is also not working, how can I achieve it, kindly help.

Try this then

1. Remove mandatory from here

2. Remove default value

3.Check this to true

4. Create Seperate UI Policy to make that field mandatory

Result =
