I created a couple of groups with type = Group, the business came back and said they wanted the group to reflect the group type, so I went back to my update newly created groups and configured e.g. "XYZ team" and added the new group type, but it is not being captured in my update set. I even did a forced update and still was not captured; how do I get the type to reflect the type. I hope this question makes sense

Group table is a data. To move change in Group table, you need to move them manually through XML only. Capturing Update set also can work but moving through XML export and Import is best way.

Alternative way to capture them in Update set is as Follows:
Step 1: Update all the Group record with correct values like Type etc based on requirement.
Step 2: Filter them on the Groups list and Select them all as below:
Step 3: From 'Action on Selected Rows' choice, click 'Create Application File' as below:
Step 4: Pop up will come like below where you have to click 'OK' Button:
Step 5: Now selected 6 record as above will be captured in your Current Update Set as Metadata. Now you can move them through Update set also.
