How do I edit 'Additional Action' menu options from within a form?

I am in the Release form and when I click the hamburger and select 'View' I want to modify what is displayed.

You can edit this in UI Macro "view_context"

If you just want to hide it. GO to System UI --> Views and search the view you want to hide then add roles/ Check the hide checkbox
