Every company is probably different.
I have been working on a project remotely and we have just been working in the same update set, but constantly communicating and doing code reviews to ensure we are never accidentaly creating collisions or over-writing one another.
Depending on your situation, you might be able to use update set batching, merging, or use source control. There are lots of options out there.
