In the platform UI, go to whatever table you are using in the widget, such as Incident,
Change the view to Mobile
And then configure the list layout
This should reflect in the portal

Can you take a look at these other custom widgets that you have
case_incident_data_table
request_data_table
I see your code is calling these widgets so maybe it's coded in there.
Also, what's the reason why you couldn't use the OOTB widgets?
