How to add variables on Workspace List View

We can add catalog item variables on native list view, but now I want add variables on Workspace List view(Legal Counsel Center).

That's correct, you can add that in native RITM list or SC Task list using a workaround but that's not possible in Workspace list view.
List view of table is rendered using the UX list you configure under UX category.
Why not do this?
1) use a database view and join these 3 tables RITM (sc_req_item), Variables ownership (sc_item_option_mtom) table and Options(sc_item_option)
2) then create a UX list on that database view and show that in workspace
3) then in that UX list add your required columns
