In which update set you want to capture please select update set as per attached screenshot. variable, Variable set, Ui policy, client script ...everything you can capture .

I have created separate update set after creating catalog items in that update set i want to capture everything how to do that ?

Hello Snow,
you have to change something of variable, variable set, business rule etc and revert to previous one.
For exam : 1.
your variable name is "Price". you change something from lable "pric" and save. And back to again save "price".
2.For BR, change BR name and description , its captured in update set in which you want to capture.
Follow for others thing you want to capture.
