As you said I have updated the scope: Now mobile but not reflecting that colour in my mobile app.

No worries!!
You can try this way once: First cerate a UX in sys_ux_theme.list table ( you can refer to other records for example)
what you can do is, after you have setup the theme, Navigate to System Mobile> Mobile Branding > Mobile App Configs :
Open the record which you are using :
Once, you are in the record , select the Theme:
