How to create a field on a Service Portal request form that will default to a specific application

I have been tasked with creating a widget on the Service Portal for a new application we are rolling out. This is bypassing our normal process of "Request Something" and going directly to a short form that is catered to that software. There is no need for the end user to select the application from a drop down list as the widget is only for that one item. We do however want the data captured for reporting on the back end.
I created a variable question for that new catalog item. A Lookup Select Box that is pointed to our application list. When testing, I confirmed it pulls our list of applications to choose from.
What I want to do is set one application to be the default. I will then create a Catalog UI Policy to hide the question from the Service Portal.
Any help would be appreciated for making the new application the default for this new widget. I went to the default value tab and added the application there but this does not populate when testing.

@Danny Barker Did you try passing the sys_id of new application in the Default Value tab of the variable.
