How to define the top result in a reference field list

I have a reference field for all the service offerings. One of the service offerings is called "unknown". I want the "unknown" option to be shown at the top of the list as the first option and then followed by all the service offerings in alphabetical order.

How do I force a specific reference option to the top?

The only way to achieve this is to sort the results in the Offerings list view alphabetically, changing "unknown" to something like "-unknown".
