Hello,
Whenever I encrypt a field, this field disappears in the form. In the document "https://docs.servicenow.com/bundle/newyork-platform-administration/page/administer/encryption/task/t..." explained that "The selector appears only for users who have two or more encryption contexts to choose from. Users with either one or no encryption contexts do not see the selector."
How can assign encryption contexts to users or roles? Why can I not see the encrypted field in the form even I am security admin and elavete my role?

If you aren't already seeing the encryption context on the roles table, you can configure the form layout to add the encryption context field. You can also personalize the roles list columns to show the encryption context there.

You would need to assign the role associated with the security context to the individuals who should see the field. If there are two roles associated, both roles would be needed. The Encryption Context specifies the type of encryption, Encrypted Field Configuration takes the context and applies it to a specific field. You also need to set up a role and assign the encryption context to that role.
