How To Remove Default Annotation Text on Catalog item

Although there was no text to begin with and I've added new text, some default text is still showing on the catalog item annotation in the service portal. How do I remove this?

This is likely in the variable definition, which should be viewed in all variables in the left nav or maintain items for this Catalog Item, both in the native UI.

I was able to located the respective variable, however, I'm unable to edit it even as the Global Admin. Suggestions? There were a couple 'urgency' variables associated with the 'Create Incident' form, and I can edit the other one, but it doesn't reflect any changes on the form.
