I have set default value of assignment group from dictionary. It is affecting globally on all the modules. So how can I set default assignment group for incident table only not affect on other?

You want a Dictionary Override, my friend:
Open an Incident
Right-click the Assignment group field
Go to Configure Dictionary
Click New
Table: Incident
Submit

You need to create a Dictonary override.
Scroll to the bottom of page when you added Default value & look for Related list Dictionary override & create a new one for incident table.

As mentioned by Jaspal you can use that approach
Another approach would be using onLoad client script OR Display Business rule on incident table
