I can't change Configuration item field value in release(rm_release)

Even if I change the value to Lookup List button and save it, the value does not change.

It can be changed in Change Request(change_request), but not in Release(rm_release).

Check if there are any existing UI policies, scripts on rm_release table that defaults the configuration item field. It might be dependent value.
