I want to know how to add multiple Demand Managers for a Project / Demand Approval / Rejection.

I am using the Yokohama version of ServiceNow

according to the official documentation: Demand form

It is expected to have just a single Demand manager, the field is a reference to select one record only. If you want to break this and change it, you can change the field type but it might and most likely will have some impacts, when ServiceNow expects a single sys ID and you will change it to allow insert more sys IDs it will bring problems.

I don't recommend to change this.
