With the Employee Center (and reportedly more features in the future) being released as store apps, how does this work to get to play with them on our personal instances?

Unfortunately, there's no solution for apps that ServiceNow themselves offer via store.
It looks like ONLY something Store partners can do.

Its a shame really.  Whole parts of the platform becoming absolutely inaccessible to the people most able to drive adoption.

Totally agree, ServiceNow need to address this as it is stifling developers/innovators, the very opposite of what they want.
