I just tested in Jakarta. In a List collector such as the watch list on an incident the following will work: ref_ac_columns=email,ref_ac_columns_search=true,ref_auto_completer=AJAXTableCompleter
However on a List collector variable on a catalog item it only works in the service portal, in the CMS it will just show the display value.
Maybe play with a database view is the only thing I can think of.

And where exactly do you right this? Like I need to edit a list collector for Incidents, that only displays Incident currently, want to add Short description as well.

This post is about a list collector variable on a service catalog form in the CMS, I am unsure what you mean.
