How to modify the colors of the bubble chart of the work platform of the demand, based on conditions in the project table?

I'm not sure if I fully understood your question, but you can configure your Demand Workbench Bubble Chart by following Demand > Settings > Workbench Config and selecting the record Demand Workbench.
