How do I change the priority color dot, for highlighted text?

If you personalize the list view using the gear icon and uncheck "Modern cell coloring" is this the results you are looking for?

This should be in configure style of priority field configured. Can you right click on the priorities field, click on configure -> style and then share screenshot ?

Go to list view and click on gear icon
