Service Operation Workspace Where do go to configure it? More specification the Email option that appears in a RITM of INC always sends it from the login technicien, I want from to always the default email account

It is not possible, the reason is SN works based on logged-in users until unless it is some jobs or flows which run from the system user.

are you referring about the email client template?
Please share some screenshots about the issue you are describing here
All emails from the instance will go through the SMTP email account i.e. instance email address unless it's overriden
