Subscribable Email Notifications - how do they work?

I guess my confusion is that notifications are not behaving the way I expect them.
I expect my users to be able to 'unsubscribe' from a particular email notification and stop getting them...however, they still continue to get that email notification IF it is addressed to them.
Here is what I understand:
1) Subscribable emails are NOT meant to be addressed to any particular person (is that why the 'user field' disappears in email notification form when the Subscribable box is checked?)
2) If an email notification is addressed to YOU, there is no way of stopping that email...it will get to you even if you have unsubscribed from that email notification.
3) If you subscribe to an email notification, you will get a copy of that email (no matter who the email was addressed to).
If an email notification is NOT Subscribable and NOT Mandatory how can you exclude yourself from getting that email notification EVEN if the email is addressed to you?

Pre-Aspen Subscribable Notification were actually a completely different feature. You can learn more about that here ServiceNow KB: Subscription-based notifications are not working. (KB0516987)
(Article is essentially obsolete. Only applies if you are running June 2011 or earlier versions of ServiceNow)
