Hello @Rafael Batistot
For one person, you can directly use "FROM" field. For multiple people you can use this condition field
and add condition like email.from || email.from ==

Hello @Rafael Batistot
I already highlighted in the screenshot that it's not available in the dropdown - you need to use CONDITION FIELD
REFER the screenshot please. There you can give condition in scripted form.

Ok I got it @Rafael Batistot
Referring your screenshot again, I can see you are using flow designer. So in flow designer you have no choice to add condition like that. The screenshot I shared is from "inbound email action"
