I took over development of SOW for my companies instance of SN. We use Incident and Change and want to move from legacy to SOW. However, rarely does UI Builder work in the ways that I find documentation for or even in YouTube videos. I am wondering if there are roles or pieces of the package we are missing to make this workable as a developer. I am an admin. An example is attached in the screenshot. Much of the time when I try to work in UI Builder or for SOW in general I get blocked. Or this video https://www.youtube.com/watch?v=2e-eIy0C9TY ours doesn't seem to align and when I then try to go into UI Builder it is really convoluted and not intuitive/doable.

UI builder has not made our work easier, that's for sure. Especially when OOB does not comply to the requirements.
Start with checking the Application manager (type 'plugin' in your navigator pane). Make sure all your Store apps and plugins are up to date, because that's a manual thing. If you are running behind there, you are probably missing things.
And when you find the tables in the backend, bookmark them. ServiceNow also tends to update the menus, removing things you actually need. Check the dictionary for the exact table name(s).
