Unable to select a UI Builder Theme

I have trouble with changing Themes in UI Builder. Here's what happens...

 

I click the Create An Experience button from the UI Builder page. Here are my settings.

I open the experience and create a Theme Preview page from the Legacy templates.

When I go to select a Workspace Theme in UI Builder by selecting Menu > Edit Experience Settings > Branding and theming. I would expect to be able to select a Theme and I've done this before. There's a setting somewhere I'm missing.

An alert I get is Read Only: The page template and Variant are in different application scopes.

 

If you can point me in the right direction I'd greatly appreciate it. 🤗

Turns out that only Portal or Custom Experiences allow for their own theming.

Hey, what do you mean with custom experience? I'm having the same issue. I created a Workspace using App Engine and Polaris is set as Theme and I can't change
