I'm building a logical topology and wanted to know what kind of database ServiceNow utilizes. Also, is there anyway to find out more information on the database when logged into a ServiceNow developer instance?

The default is MySQL but I have also read in wiki that it supports Oracle as well.
You can go System Diagnostics -> Diagnostics Page in your instance and get all details under Database overview.

OOB it is MySQL.You can find more info from the stats.do page and then click on Open Source Software.
