I installed Employee Center Pro onto a sub-prod instance and I have just learnt we are not licensed for it. As a result, I now need to uninstall this, so that I can start afresh with an Employee Center update set.

Hi there,
There's no option to uninstall. Because it's a non-production instance, you could perform a system clone (which you should do regularly anyway).
You could try to revert some pages or hide functionality. Though Employee Center Pro also updates a lot of content, so in my opinion it would be too much to manually try to convert. As mentioned: system clone.

Hi I guess the only way is to clone the instance from prod to sub prod. You cant uninstall plugin
