Have a play around with the methods in the Workflow script include. You can delete the old workflow with deleteFlow and start a new one with startFlow.

Make sure you test it out on dev though, personally i'd just let those RITM's run their course on the old workflow. If they're brand new you could just recreate them, if they're halfway through the workflow then restarting with a new version could be problematic.
