This is likely because the catalog UI policy you used to show/hide variables and choices is being applied to all RITMs, including those submitted before the changes were made.

To avoid this issue, you can create a new version of the catalog item and apply the changes only to the new version. This way, existing RITMs will continue to use the old version of the catalog item, while new RITMs will use the updated version.
