what is the difference between Opened for and Subject person in HR service?

These 2 terms are quiet confusing some times as they works almost identically.

As part of HR service :-

Opened For :(Employee Service Center only) Configuration of the HR ticket page header for the person that the HR case was opened for and any approvers.

Note: The HR ticket page is where users can view the details of an HR case in the Employee Center. See Configure the HR ticket page header for an HR service for more information.
 
Subject person :(Employee Center only) Configuration of the HR ticket page header for the subject person of the HR case and any task assignees.

Quite simply, Opened for is the user making the request; Subject person is user whom the case is about. More often than not, these two fields are the same user on an HR case, but there are instances where they are different.

For instance, for a merit increase compensation case, the manager may be making the request (i.e., Opened for) about their direct report (i.e., Subject person).

This is also typical for onboarding lifecycle event cases where the hiring manager is the Opened for user on the case and the new hire is the Subject person, which lets you easily differentiate task activities to be completed by the hiring manager or the new hire.

@Sean Antle explained the difference perfectly.  To give some more detail, OOB the Opened for user will have access to the HR Case.  The Subject person may or may not have access, depending on the HR Service configuration.  Opened for is the user that most OOB "automation" is about.  For example, if the HR Service is set to add the manager to the watch list, it is the Opened for's manager.  When the case is created from EC/portal, the Short Description will default to the HR Service + " case for " + Opened for.
