I don't think it can be hidden. You can go to fx_currency table and remove the existing currency records and it won't show up. 

Otherwise create a custom field.

Even though removing the currency records USD is still there

This shows when glide.i18n.single_currency is set to false. What's the use case of wanting to hide this? In multi-currency mode this is generally needed

I agree with point mentioned by @Kieran Anson and you should keep it if multiple currencies are there in instance so that users can select as per what they require.
