Modify the ServiceNow Add-ins for Office

We are implementing the ServiceNow Add-ins for Office, to allow our users to create an incident directly from outlook, instead of emailing the Service Desk.

 

For the most part, I have it working the way I want it to work by modifying the "outlook" view. But I want to set the field "contact_type" in the incident to a new value that I will create, so we can track how well (or not) this is being utilized in the environment.

 

I can't find anywhere in the documentation on how I can do this. Any thought?
