is it possible to override the display value of a field (service to Business service )when the assignemnet group is servicedesk

You can achieve this using the onChange client script. I've tried your requirement and it worked!!

I've attached the screenshot of the client script. Implement the same client script it will surely work for you.

If you have SN Utils installed and you have this option enabled Show Technical names on page load. You have to disable this, once after then it will work.

It's just a chrome extension, don't worry about that and just implement client script that I've attached. It will work for you.
