I noticed that after I create an update set to create or modify anything, the system automatically creates a few update sets as I'm working. When I look inside of the current update set, nothing is captured. Everything is captured in the other update sets. I have to make these the child update sets under the main one. See attached for an example.

Huh! @Menalik!
I happened to witnessed the same, it's due to the usage of Catalog Builder, that's why it has the "CB_" prefix.
Not sure how to automate it under other parent... maybe one thing - you could keep default update set, start to crate an item with CB, it would create the update set and you just rename it.
Either way, It's very annoying, I can tell you ://
PS: it's auto-closed while you publish the item in the CB...
