Hi,
1. How to delete a service map. I have deleted the entry point and Application service.
Then when I create a new service and give the entry point, the map is appearing instantly.
So where is that map and its connections stored.
2. On Some hosts in the map, I have chosen the option of 'Keep' in traffic based discovery. Where will this data be stored (so that I can undo it if needed later on), as you know there would be several records in the traffic based connections.

Traffic based disco can certainly help provide data or hints about connections between hosts. Once the map is built out correctly - with whatever nodes / relations the SME agrees is appropriate - then its unlikely necessary to leave it enabled.
Probably doesn't hurt, but once in an operational state, I'm not sure what value it would add.

All associated CIs are located on a hidden table called "Service Configuration Item Associations".
svc_ci_assoc.list will navigate you there. Hope this helps
