For Service Operations workspace the advised procedure is as follows:
- Navigate to All > Now Experience Framework > Experiences.
- From the list of UX applications, select Service Operations Workspace.
- On the UX Application form, from the UX Page Properties related list, select the chrome_tab property.
- On the UX Page Property page, when the Type field is set to json, edit the Value field, for example, to add or delete routes or tables.
- Click Update.

Hi
Here is an example, in your case it would be "Service Operation" workspace:
Go to 'Configure Workspace' by clicking on Profile,
Scroll down to 'New Record Menu items' related list and deactivate, make sure you are in proper scope, I guess for you should be in 'Service Operation' scope.
Make the "interaction" record as "Inactive".
Mark my answer correct & Helpful, if Applicable.
Thanks,
Sandeep
