Here is my crisp answer, when any process is defined its not 100% efficient or accurate. It requires maturity over the period of time. a lot of time we cannot find those gaps that exist on the process hence ServiceNow provide this process mining capabilities which can you to streamline and fix process were ever the gap is identified.
and this Process mining can be used for any modules lets say for example ITSM we have e.g. change management process which servicenow provide with ootb process and work flow, a lot of organization may not use OOTB they may over go customization and beyond in this case to mature the process of change management and so on etc..
