We use to use to generate RITM from a catalog item. however I have been asked to generate Demands from the catalog item now. I am trying to understand the advantages of Demand management.

There many differences between RITM and demand.
RITM is used for fulfilling service requests (e.g add user to group, provide access to application, order computer ....)
But, demand is part of Project management to manage your demand and ultimately to release your demand in production.
Demand can be for adding new feature to product, deploying new application.....
