Which relationship type can be used to relate ESX Server and a virtual machine?
Does "Members::Member of" work?

I don't think there is a limitation. If you wanted to create it as a "contains" "runs on" or "receives data from" relationship you could. On the relationship editor it will limit the type of relationship you can select based on the class of item, but CMDB admin role should allow you to select any rel type you want.
Are you talking about the Virtual Machine Instance class/table, or something else?

According to VMware Component Relationships - ServiceNow Wiki , the relationship between ESX Server and Virtual Machines is Virtualizes::Virtualized by.
The problem that I have is that all the CIs mentioned (vCenter, ESX Server, VM Instances, Templates and Resource Pools) can be found, EXCEPT "Virtual Machines"

Sounds like all your data is from the VMware API probe. "Virtual Machines" come from direct discovery of the server by IP to get all the Windows, Linux, ... server CIs. The relationship to the model above comes automatically.
