I created my first flow, I am trying to associate it with the request table but it's not showing in the picker. I have activated it. Is there another step that needs to be done?

as always: screenshots would be really helpful, as it is not clear what you mean with "I am trying to associate it with the request table".
Therefore I guess you want to create a trigger for created/updated records on table sc_request, correct?
If so, this is not possible. Instead, you have to use the "Service Catalog" trigger:

Maybe refreshing your browser? If that doesn't help, can you share a screenshot of your picker? Check on the 'updated' column. And also: check your update set. Is it in there? You can also click it from there. Maybe by accident your changed the name and you can't find it because of that.

Please make sure you add the trigger and if you want to use core trigger you can see liek this
