I have a few cases where users are assigning incidents to a problem when they shouldn't. Short of going directly to the tables, is there a way that I can remove an incident from a problem?

This would be a matter of removing the PRB value from the Problem (problem_id) on the incident record.

Now, you should also be able to hit an "Edit" button on that related list and be able to add or remove incidents to the problem in batches, your specific setup might have this button hidden, or you might be missing some permissions, or the list control might be set to disable this option (see below)

Not sure how wide range this problem (no pun intended) is...but you could just navigate to the problem list, scroll down to the bottom, and remove the incidents there in addition to what williamsun mentioned.
