How to change model category for an asset after it is deployed

When I have created an asset (ex. a powerfull laptop) and have deployed it as a server (multiple model categories).
Now I want to deploy it as an office computer, and would like to change the model category to Laptop.
How can I change the model category, because ServiceNow locks that field after the first creation.

In our company we have many different types of computers, which requires different datasets.
We have medical computers which have information about the computer based on regulations, and then we have the same computers for research with different information set.
That is why I am searching for an answer whether it is a good idea to seperate them into different model categories (and classes) or not.
And how I solve the question of moving CIs from one model category (class) to another

I will suggest you to keep Category as same and only change their model. It is not good to have multiple categories for same type of asset.

Depending on the information you are looking to track, then new CI Classes (and corresponding Model Categories) may be the correct approach, but it may also be sufficient to just include attributes on an existing class. You could then identify the purpose and expose the fields in a form section.
For example, you describe "different types of computers." Are they really the same types of computers, but with different purpose? Is it a laptop model used for both medical and research purposes?
What are some of the different datasets you're working with? That can help us to provide guidance.
