your question is rather unspecific and you screenshot is not helpful. It seems that "ServiceNow Sending SMTP" is any custom value in your instance.
But to answer your question:
- The default sender email address can be changed in the email account configuration: refer to https://docs.servicenow.com/csh?topicname=c_EmailAccounts.html&version=latest
- You can also change the sender email address to something else and individually for each notification: see https://support.servicenow.com/kb?id=kb_article_view&sysparm_article=KB0777647
