i created a new catalog item form but the resultant catalog task form does not have the fields that is from the RITM.
is it to edit the default view or how can i present the ticket with the correct boxes on it for the fulfiller ? it is just showing some default view ? can i specify which form view to use for this ?

Are you doing this with integration, in that case we need make sure Touch is variable must exits in SN to bring data and store.

I do not want these in Red to appear on the catalog form when it is opened
i only need them after the catalog task is created . how to get it ?

1. Is this catalog item in SN or in 3rd party tool?
2. Are you bringing these value from 3rd party tool to SN via API?

i found this not sure how to get it configured
We don't have to show the 'office use only' variables to end-users. Here is how we can do this:
- Create an "Office Use Only" Variable set to contain your variables. For each variable within:
- Set Variable visibility to stand alone so Variable details won't show to end-user on their ticket in Service Portal
- Hide the Variables on the Catalog Item by UI Policy, checking only "Applies on a Catalog Item view"
- Hide the Variables on Request Items forms, checking only 'Applies on Requested Item view'
- Consider adding 'itil' role to Read and Write (permissions tab on Variables record)
- Add the variable to display on the Catalog Task in which it needs to be populated
