When catalog item submitted, ritm will be created and along with that email will be sent to (xyz@gmail.com) from servicenow.
The email subject is : "test"
Email body contains few variables.
So for the above mail they will be sending a response which has to be captured in ritm worknotes.
And the email format should be below.
From : xyz@gmail.com
To : servicenow
Date :
Subject : your email with subject "test" has been successfully sent.
How to configure inbound action for this? Subject line should not contact prefix as re: (reply) , but it's response for the mail.

You can try with Notifications
Based on your requirement you can select a ServiceNow group, and whoever members are present in that group will receive the notifications.
In the message content body add the Request item and work notes
