We have some articles we create with information that Subject Matter Experts and others contribute through email, etc. I'm wondering how Knowledge Managers out there keep track of SMEs who contributed the information but are not the actual author of the article. Can you add a field or repurpose an existing field? How do you keep track of SMEs so you will know who to contact when you are reviewing the article for relevance after a year of being published?

It depends on how you work, but having people send emails doesn't really sound like a great way to do this. You can leave reviews/comments on articles and the owner is notified of them, so they can update.
