Regarding Sending emails and Notifications

When I send notifications or emails I can't see them in the activity stream of that incident record. Because, the state of email in email logs is send/ready. When I manually change it to sent then it appears in the activity stream of that incident record.

Since it's your PDI then email sending is disabled so every outbound email will be always in sent/ready state and it won't be marked with Sent state.

Till then it won't show in activity stream.

Once you mark state as Sent it will appear. 

If you will test this in customer instance and once email goes to Sent state it will start appearing in activity stream
