What is SKU ? I heard this term multiple times from people. csm SKU.. SKUs subscription..etc.
Can you please explain in simple words ?

Just noticed I used "ITSM Pro Standard" and "ITSM Pro Professional".
Let's call them their correct names instead - "ITSM Standard" and ITSM Professional". There's indeed no additional "Pro" in any of them…

SKU normally stands for Stock Keeping Unit.
Or, a line-item in a price list/offering.
If you buy ServiceNow Licenses, you buy one or more SKU's.
ITSM Standard is one SKU, ITSM Professional another etc.

as
"Both plugins are active by default for users with an ITSM licence."?

I won't comment on what's included or not, as there are to many flavours to be general.
I would agree however, that wording would be better using License than SKU.
The term SKU is used widely in the software industry, and elsewhere, as a descriptor for a product/product configuration from a pricelist/offering that you as a customer buy, so I don't see a problem with using it - but one should also communicate in a way that makes sense to the recipient of the communication... so, yes License might be a better word in your example 🙂
Given the text you provide says ITSM SKUs - as in a plural "s" - I would interpret that as any of a given number of ITSM SKU's/Flavours/Licenses so yes, I would assume they mean the same.
As always though - check with your account management from ServiceNow as they, as well as your procurement, will have access to your specific contract details.
