User is facing RITM list view issue

User can see only two columns in RITM list like catalog item field and stage field as shown in the attachment

Never seen anything like that. What roles does the user have? Are there any custom ACLs? Have you debugged security? Is this happening in other environments for the user? Is this happening in all browsers?

Agree with @Brian Lancaster looks like ACL issue, but it is very weird kind of ACL, if not found any issue, try ti create a new user and replace the access with another user and check.
